Peanut Sauce ( Sambal Kacang )


This is a condiment for Chicken Satay ( Sate Ayam ).

Cooking time : 15 minutes

Ingredients
- 100 g fried peanuts, skinned
- 3 shallots
- 4 cloves of garlic
- 2 red chillies, seeded
- 2 Candlenuts (Kemiri) or 4 almonds as substitute
- 150 ml water
- 2 tablespoons of honey
- 2 tablespoons oil
- salt to taste

Directions
1. Heat the oil in frying pan, then saute the shallot, garlic, candlenut and the chillies for few minutes. Set aside. And then grind or blend them together with the fried peanut.
2. Cook the mixture over low heat and add the water and the honey. Stir it well while cooking to avoid burning. Cook until the sauce gets thick.
3. To serve peanut sauce with satay: mix the peanut sauce with sweet soy sauce (kecap manis), add shallots (finely sliced) and some bird's eyes chillies (very finely chopped, optional).
